Here is a great breakfast to start your day. This one will keep you full and satisfied without the drop in energy levels that you would get with a high carb/sugar breakfast. It’s full of good fats to enhance the taste and keep you full longer. Top it off with some berries for some added antioxidants and nuts for a bit of protein and you have a winner for a great start to your day. Chia is also great for cleansing out the digestive tract and acts almost like a sponge moving through your GI tract to push out toxins and waste while aiding in easy elimination.

Coconut Vanilla Chia Pudding

INGREDIENTS

  • 1 cup chia seeds
  • 3 cups unsweetened non-dairy milk
  • 1 13.5oz can of coconut milk
  • 2 tsp vanilla extract
  • ¼ tsp ground cinnamon
  • ¼ cup shredded coconut
  • 2 cups of berries (your choice)
  • ½ cup of nuts of your choice (walnuts, pecans, almond slivers, etc)
  • Optional – ½ – 1 tbsp of sweetener of your choice (maple syrup, coconut sugar, stevia)

DIRECTIONS

In a large bowl, combine the chia seeds, non-dairy milk, coconut milk, vanilla extra, and ground cinnamon. Cover and refrigerate for at least 4 hours or overnight. I prefer to portion out the servings into mason jars and then add toppings before eating the next morning.

Substitute ½ cup hemp seeds, sunflower seeds, or pumpkin seeds for the walnuts.
